Jack Austin’s Famous BBQ Pulled Pork Recipe

There are some things in life that are just meant to go together. When we think of summer it’s hard to not imagine a delicious barbeque meal. We’re giving you the recipe for our famous pulled pork to enjoy at home. The best part is you don’t even need a grill to make it! 

For the pork rub:  

  • 2 tbsp ground black pepper
  • 2 tbsp ancho powder
  • 2 tbsp chipotle powder
  • 1/2 cup dark brown sugar
  • 6  tbsp salt
  • 6  tbsp paprika
  • 2 tbsp  garlic powder
  • 2 tbsp  onion powder

Combine all and reserve. 

For the pork: 

  • 4 lb pork shoulder

Rub pork with the rub. Place pork in large deep baking dish.  Wrap with plastic wrap and then foil.  Bake at 300˚f for  6 hours.

Allow pork to cool to room temp. Strain liquid through a chinois or colander and defat. Shred pork by hand and remove large pieces of fat. Season meat with bbq sauce and cooking liquid to taste.

 For the BBQ sauce:

  • 1/2 cup chopped onion
  • 2 garlic cloves, minced
  • 1 jalapeño or fresno pepper chopped (no seeds)
  • 2 1/2 cup ketchup
  • 3/4 cup brown sugar
  • 3 cups apple cider vinegar
  • 1/2 cup apple juice
  • 1/2 cup honey
  • 3/4 tbsp Worcestershire sauce
  • 3/4 tsp kosher salt
  • 1  tsp freshly ground black pepper
  • 1  tsp  celery seeds
  • 1  tsp  dried crushed red pepper
  • 1  tbsp liquid smoke

Sauté onion, garlic, and jalapeño pepper in olive oil until soft. Stir in ketchup, dark brown sugar, vinegar, apple juice, honey, Worcestershire sauce, kosher salt, freshly ground black pepper, celery seeds, dried crushed red pepper, and liquid smoke. Bring to a boil. Reduce heat to low; simmer, stirring occasionally, 45 minutes.  

Combine BBQ sauce with cooked shredded pork and serve. We love it on a bun, but it’s also great alone! If you’re feeling adventurous, top with coleslaw and pickles. Enjoy!
